Anyone know if, in SQL 2008, there is a way to backup a database, but specify the tables backed up, and, during the restore on the destination server, restore only those tables in the database?

No, not natively. I believe Red Gate SQL Backup software allows it though.

Quest (Dell) LiteSpeed does this, also. In the absence of 3rd party software, the routine is to restore to a second server and copy the table to your target.
