We have a Sql server 2000 Standard one physical processor license and hosting in vwmare. In vm, how many VCPU can be added ?

Depends on the OS. Usually 4 for SQL 2000 SE though.

It is worth noting that SQL 2000 was not supported on VM. I say "was" because SQL 2000 is not supported at all any longer.
