Check this link http://www.sqlserver-dba.com/2010/09/sql-server-2005-and-sql-server-2008-upgrade-tasks.html for a range of options - which you can tailor to requirements.
Make sure you have a checklist of everything with sufficient acceptance testing , and rollback if necessary
