We have changed some in the authorization config of database. I have add user xy to the Server Role sysadmin (i'm not sure)
And since that time when we creating a new database always user xy appear as owner instead of administrator.
In the whole server Rolen the user xy is no longer there. I remove them.
How can i change the config, that the user Admin is always owner of created Objects ?

At the time of new database creation, <default> in Owner area represents login, through which you are logged in and creating new database. You change it at the time of creation.
