I have a server with SQL 2005 and would like to log ship to a different server running SQL 2012. Before I try, does anyone know if this will work?

You can log ship to a higher version - however, you cannot make that version available in STANDBY mode. The databases will not actually be upgraded until they are recovered...

Note: if you fail over to the log shipped database you will not be able to fail back.
