Hi all,
There is approximateley $8k diff in the cost of 2008 R2 Enterprise versus Standard Edition.

But that cost is paid 1 time, correct? So, if I change a server from Enterprise to Standard (by uninstalling the Enterprise instance and installing a Standard instance), how can that save me money? I have already paid Microsoft; do you get a refund?

I've never heard of a refund, but what we do here is use that license on a different server. We have hundreds of servers. Licenses don't go to waste.

Perhaps contact Microsoft regarding a refund.
