I would recommend that you follow the rule "THOU SHALL SERVICE PACK THY SQL SERVER" :-)

Seriously, I would strongly suggest SP3a, AFTER testing in your test environment to ensure your applications still work. At the LEAST - go SP2 + the slammer hot fix.

Wanderer is absolutely right.
I only comment because I have had to clean up the results of someone saying (its not going to happen to me).
Not installing service packs is a open invitation for someone to make a mess of your system or use it for their own purpose.

Unbelievable. Not having the latest service packs on SQL Server is like sitting dynamite under your servers and hoping it never explodes.

When life gives you a database server that does not have service packs installed when they have been available for quite some time, fire the DBA. It is irresponsible of the DBA to not have these installed yet.

That's a bit of a surprise as some serious bugs have been fixed in service packs.

There have been major security vulnerabilities fixed too - I'm guessing you have a closed environment or you would have noticed that.

Yes you should apply the service packs otherwise you will have to do it when you come up with a problem to see if it has been fixed. Better to get that possibility out of the way. Remember to test before applying the service packs to a production system as you may be relying on bugs or bugs may be introduced.

Happpens all the time.
Fortuntely they have lots of money to hire consultants when the realise - either that or decide it's a problem with sql server and migrate to a better database like Oracle or Access.
