You've asked such a broad question. Instead of us writing countless words on this subject, how about buy a book on OLAP or read up on it in SQL Server Books Online?

It's a preaggregated storage structure, that is indexed along a specified set of hierarchically organized dimensions.
You can query this structure with MDX and the whole point is that it will return the result very quickly (IMC).
