i have 2 statments:

UPDATE TABLE1
UPDATE TABLE1

Suppose that first UPDATE take 5 minutes.
so the TABLE1 be lock 5 minutes?

Well the whole table probably won't be locked, just depends on how many rows are in the table and how many rows you are updating. SQL Server starts locking at the row level and escalates as needed/wanted.
