can update statistics job run in off peak hours cause high cpu?if so,what is the solution?

It will not block the tables but can cause CPU spikes.. are you running script in one batch or have multiple steps for each table etc? If you have it as a batch, perhaps you can split them up into multiple jobs and run them in parallel.

its a batch process.separate job for seperate database

Like I said I would split the batch process into multiple jobs and spread the tables into the jobs...you will be done faster..
