I am just curious how often other organizations reboot their production sql servers.. once a month? Quarterly? Never?

Only after applying a patch since we have no users during that time anyway.

Just periodically during maintenance windows that require reboots of the physical machine. All in all, this would probably be up to 4-5 times a year max.
