Has anyone done this upgrade on a production system? Are there any gotchas?

Nope. Just make sure you back up every database, including your system DBs (master, model, msdb). The following articles have excellent advice on all the little things you need to watch out for:

I'd recommend not restoring the master database after you install the Enterprise edition. If you have added stored procedures and such to master you should script them out and add them manually afterwards.
