You won't and can't. Consider using database mirroring, clustering, or log shipping.

How do I put my shoes on if I don't have any?

Ermmm ... can't you do a tail log backup with server down? (well, service started in special mode - I forget the command exactly ...)

I assumed the OP meant that the actual box was down and not just the service.

Hehehe ... good point. Pretty hard to do anything if the server itself is dead. Book-end perhaps?
